Choose your favourite seasonings and as your morels begin to crisp up - deglaze the pan with a healthy splash of your favourite red wine. NO LAMBRUSCO or BOONE'S FARM!!! Use a merlot, cab sav, or similar. The mushrooms infuse with the wine to create a magnificent flavour profile that does not overwhelm the natural flavour of the morel.
