This is a good one, we really liked it

Puffball Parmesan

2 Tlb minced onion
1/2 C chopped Green pepper
3 cloves garlic minced
4 Tlb Olive oil
1 16oz can Italian tomatoes
1 3oz can tomato paste
1/2 tsp salt
1/2 tsp sugar
1 Tlb fresh basil
2 C grated parmesan cheese
1 C dry bread crumbs, seasoned with 1/2 tsp savory
4 Tlb Butter
6 1/2 inch thick slices of Puffballs
1 egg slightly beaten with 1 Tlb milk
6 slices mozzarella cheese

Preheat oven to 350
Saute' onion, pepper and garlic in 1 Tlb olive oil until tender. Add tomatoes, tomato paste, salt, sugar and basil. Bring to boil reduce heat and simmer 15-20 minutes. Combine 1 cup parmesan cheese with seasoned bread crumbs. Melt butter with remaining olive oil in large skillet. Dip puffball slices in beaten egg and milk. Dredge in bread crumb mixture covering all sides. Fry in butter and oil mixture over medium heat until golden brown on both sides. Drain on paper towels. Place browned puffball slices in singel layer in a oiled baking dish. Cover with mozzarella cheese slices, then with tomato sauce. Sprinkle with remaining parmesan cheese. Bake at 350 until cheese is melted and all is heated well....about 20-30 minutes

The Wife and I did this recipe and substituted the PuffBall for a Chicken of the Woods and we did another Pan in the Sulfer Shelf.
WOW!!!
Took some advice and changed things up a bit (added 2x the Garlic and used Fire Roasted Tomatoes)
This really turned out Awesome!

In Theory, This works GREAT with Chicken of the Woods & I can't wait to try it with a Hen!
