Made some pickled pike, just opened my first jar and it was GREAT thought I'd share the recipe

Pickled Pike

Brine
3/4 C Pickling Salt
1/2 Gallon Water

Fish
3lbs Pike fillets cut into thin chunks
Enough Vinegar to cover fish

Final Pickling Brine
2 C Distilled White Vinegar
4 Bay Leaves
1 tsp. Whole Cloves
1 tsp Whole Peppercorns
1 1/2 C Sugar
2 tsp Mustard Seed
1 tsp Whole Allspice
Onions sliced thin

Combine brine ingredients together. Soak pike chuncks in brine for 2 days; keep refirgerated. Drain brine and cover pike with vinegar and soak for 5-7 days; stirring every couple days. When pike is done soaking, combine final pickling ingredients except onions and pike in saucepan. Boil slowly for 5 minutes. Cool. Drain pike from vinegar and rinse. Pack fish into jars alternating layers of fish with oinion. Pour final pickling brine over fish; refrigerate 4 days....Enjoy!

Thanks, a friend just asked if I had a pickle recipe for bluegill. I due now. :good1:
